7speed/8speed? Ratio's/width solutions, please...

Thinking of going 7/8speed instead of SS... so.

- What's the best 7/8speed ratio to plump for?

- To save buying a new wheel/cassette - can i retrofit a more modern 8speed wheel to a '92 Dawes i found on Sunday, which would've originally had a 7speed cassette fitted to an Exage hub i think; or are the axel/frame widths different at all; thus screwing up the wheel/stay alignment?
