Headset cable stop will be more elegant, usually the fork mounted ones are used on carbon / alloy forks when you get brake judder due to the steerer flexing. This will be fine with headset mount.

I'd also be tempted to keep the existing stem or get a shorter but still high Nitto stem if using drops - offroad its better to have higher bars.

Thanks for the great info. The 'enduro all-road' is pretty much what I was aiming for but without gears.

I like the look of the Compass Slumgullion, in the 26x1.75 they are the same size and style as the Panaracer Pasela that I was already considering.
 
As for the front brake, ultimately I would like this set up. Looks like it can handle the size of tyre I will be using and won't need a hanger to work with my levers.

The Pasela is great tyre at a lower price. Very similar tyre, out of the same factory - I think the compass has lighter weight folding bead and higher tpi casing making them more supple - https://janheine.wordpress.com/2011/08/ ... 26-x-1-75/
