Anything panaracer/schwalbe should be worth the money for your build.

Those Michelin world tour jobbies....i bought 26" version and found them,,,baba.
Heavy, too tight to remove and sides ruptured upon inflation. Based on my experiences.

I think I've had those Schwalbe on a 26 build.
 
I'd Retromod that - some avid shorty's and a 1 x groupset would look ace. Keep the zolatone if possible though.

WTB resolutes are a good on / off road combo.
