I ride vintage tires as much as possible until I decide that the bike in question will stay in regular rotation and then move to modern tires... But for vintage get togethers and group rides I'll break out some vintage tires.
I keep a few sets in nice condition for hero shots and a few sets for rides and stuff like that.
Vintage grips and seats are a no brainer. That technology is basically the same and I like Ourys anyways and they still make those, so...
