Can't run rear gears on them either cause gear cables aren't long enough.

Don't laugh it a good idea.
There is a chap around here who has a business making penny farthing to your own spec or replica spec.
I'm sure he would have a go at an e-bikes one, with tubeless.

He'll make some for you kid too

Who made you in charge of what cycling "should" be..!? As long as you're on a human-powered (and E-bikes are, you still have to pedal, and the motor only assists up to 15mph) bicycle - or trike, or unicycle! - then it's cycling. What it means to someone else is allowed to be different from what it means to you, and here's the crucial point, has f-all to do with you! ;-)
