At work I use Park spoke wrenches and a DT offset screwdriver. I actually do build the wheels in my stand as I find it easier than having everything loose. I use a Park stand BTW which automatically centres the rim without having to use a dishing tool.
It's easy to dish a wheel without a tool anyway. If you just have one pencil/allen key/spoke/whatever then you just turn the wheel around and true the rim until it's the same distance from your 'pointer' each side.
