I'm building a weight weenie around a 1998 Coyote ultralight frame (Easton elite tubes), have some LX M570 hubs but no rims.

Spa cycles do some but they're mostly robust heavier rims for touring or disc only. Not easy to find light ones for vbrakes. Any ideas?

Struggling to think of anything lightweight as well, DT Swiss do a couple but they seem to be +500g. A good retro rim brake rim would be nearer 400g.
It might be easier (and lighter) to buy a good set of used retro mtb wheels from the 90’s.
Or look on eBay for some NOS or lightly used rims, I picked up some Mavic XM719 rim brake rims a while ago off eBay, the XC717’s are a bit lighter though at 420g.
