This is a photo of my evening meal on Monday, made to my own recipe.

Asparagus, stilton & lemon zest stuffed brest of chicken, wrapped in parma ham.

Served alongside rice capped with sauteed red onion, pepper, dusted with rosmary and roast shallots.

I am semi seriously thinking of writing a cook book (this dish also works well on the BBQ/open fire/camp stove for those MTB weekends away!)

Get the pan really, really hot before you put the egg in. Grilling it is a good way to achieve this.
