The canti-hanger on a pair of MAG21's has broken on 1 side.. it still holds a cable but is annoying that it's damaged..
Can I gring the whole thing off, make a flat surface and drill a hole for a new (aftermarket) hanger?
Or can I just grind it smooth and pretty it up that way since it'll be wearing V-brakes anyway...

Option one sounds the best idea, that way canti's are always a later option.

Remember,we're only holding these bikes, after we die, there'll be new retrobikers being born.
Dont spoil it for them :D

Retrobikers as yet unborn are going to be way fewer than the ones who actually remember the bikes new !

Who cares if a few bikes in thousands are not acurate, sort it so its functional not authentic

They'll be wanting hover-boards not old clunkers ;)

Either option would be functional I think...

Think I'd try a bit of metal epoxy on there to try and save it. On the other hand if it breaks then you could get the straddle wire digging into your tyre and an unexpcted trp over the bars...
