pineapple upside down cup cakes

one for Al as it involves cakes and his logical thinking

the Mrs made the above cup cakes today they are/were very nice, now my issue is in the name, due to the way the cake and pineapple bond or dont in the mix when you go to eat said cakes you have hold it base upwards so the pineapple doesnt fall out! is this still classed as pineapple upside down cake or should the description now be inverted pineapple upside down cake or as its now upside down from the way it was and..... my head hurts over to you Al

Pineapple upside down cake originated in Australia but there its called Pineapple Cake (served the right way up) but when it spread to the northern hemisphere and as a act of acknowledgement of it birth place well ..................... :shock:

Never heard of them being made as cupcakes before. I thought generally they were made as one big cake thus:

Grease a shallow square baking tin/Pyrex dish and line with baking parchment.
Place pineapple rings in bottom of dish.
Make sponge mix and pour in over top of pineapple rings.
Bake.
Take out, leave to cool and turn out, pineapple side up, on to a plate.

Brings back memories though, this was a staple of home economics classes at secondary school along with raspberry buns and rhubarb crumble!

Pineapple used in cakes (truly revolting abuse of both fruit and baking ) and tinned pineapple very nearly put me off pineapple for life. It was only a year or two ago that I first tried "real" pineapple and discovered that actually I love it! Burns the skin on my hands though, like lemons do.

its called such because its baked in the whole piece,not in 2 halves that cakes are normally baked in.

Upside-down cake in my world is what the French call Tarte tatin.. which should be cooked in a pan on the hob first of all - then in the oven.

Trick is to turn it over before it cools, enabling the topping to solidify before the juice runs out.

Don't see how on earth this would work with a cupcake though.
