Hi mate, very nice!
Flite seems after '97, Selle Italia white logo is different and more recent, but it's easy to check: under saddle there a stamped circle with year of manufacture.

Do those wheels only have 32 spokes? I've got a tandem and the wheels are 48 spoke, which I thought was the norm for a tandem!

Yes wheels are 32 spokes, but not sure they were stock on the bike, they light come from another NV bike.
I will check the year of the flite ! It will be a good clue.

Stock rims on the 93 Quatrefoil in Baja Blue were Araya TM-18 36 hole. The Mavic 217's shown on it weren't even available until 1995. I run 32 hole 217's on my LTS tandem...no issues.

Like I said it's a standard 1993 catalog offered 26 wheel Quatrefoil LX. The only year GT offered a 26" wheel Quatrefoil. Specs from the back of the 93 catalog:
