Educate me PLEASE!!! V Brakes, stems and brake noodles

How quickly time flies by and to reflect how crazy this new age world is, I'm moving on from my obsession with 1992/93 and I'm going to experiment with stuff as new as 94/95! I'm struggling a bit though, so I hoped to ask some (stupid) simple questions.

Aheadsets: Do any stems that are for use with Aheadsets have brake noodles? I'm not a big fan of the old collars that locate the front brake if the stem doesn't have a noodle, but even so, can these be used with aheads? Basically I'm asking......can you use standard cantis with an ahead set up? Which leads to my next question....

V Brakes: On a V brake, does the cable run directly between the brake lever and the V brake, with no connection to the forks? Where the first Shimano V brakes XT or XTR?

Apologies for the simplicity of these questions. I've searched the site, but I can't find a definitive answer anywhere.

I'm sure that they must exist with noodles, guides, stops or rollers of some description. Threadless steerers were around long before cantis disappeared.

Yes, absolutely. There are also cable stops that mount on the fork crown à la Kona, and of course the arches of many older suspension forks have cable stops.

Yes.

Were the first Shimano V brakes XT or XTR?
XT and XTR appeared together in 1996. A bit too modern, perhaps?
