I would be vary wary of using a small volume of sprayed water.

I think it’s important to note that fresh dog poo can include various pathogens - and even the worm eggs are microscopic. Actually worse is older dog poo which has been lying there for quite a while but is still soft enough to be picked up on tyres.

You really do want to prevent inhalation of any of it - so spraying can create an aerosol mist loaded with poo particles, which you then can inhale. Not good.

That’s why I remove with stick. Wipe with grass. Cover for transport and clean safely when home.
