Differences between Shimano hubs?

I am slowly but surely starting to believe shimano's low and mid range components are now better than the top of the line stuff simply because the low end of today uses tried and tested tech, the same shimano was using 10-20 years ago.

And i hate those personalized parts shimano is using on their pre-built wheelsets, don't trust them at all.
 
I agree, the bits are far more interchangeable on the midrange kit - and it's more robust as the last gram isn't shaved off.
 
As far as retro hubs goes, the most notable and consistent difference is XT and Ultegra level have Cro-Mo axles.

Below that they are steel.
