M700 is rated at 34t max cog with a 40t capacity (See Disraeli Gears). So 11 34 at the back will eat up 23 of that capacity, meaning that the difference between your highest and lowest front rings needs to be <= 17. In practice, you’ll prolly find there is some leeway.
If you are building an older bike with triple front rings, do you really need 11 as the smallest at the back? I’d be inclined to have a biggish low range cog and sacrifice a few teeth at the higher gear end.
