Can a Single Speed Freewheel fit an Old Campy Hub?

Yep is the short answer, chainline goes pants though.

Stuck on a cheap freewheel and use the cog that lines up with the chain wheel. Or maybe do that and use a derailleur to change gears

I sold an old hubset like that and screwed on a SA singlespeed freewheel on it to check if it had Italian threads or English. I am not aware of any singlespeed freewheels with Italian threads, so it may only work with the right thread. As said it is then a matter of adjusting the chainline.

If you go with 3/32" cogs instead of 1/8" you can run an 8 speed chain and not sweat the chainline so much.
The White ENO freewheel has been the favorite among single speed racers for years. But expensive.
Of course if the bike is just a work of art it doesn't matter much.

Easy to make it better though, not so easy if the wheel is already built but you can usually re-dish to some degree.

First swap some axle spacers around to get the hub central between the locknuts
Then re-dish the rim.
There's a chance you might run out of thread on the nondriveside spokes, and you may have a little thread showing ds, but longer nipples can cover this.

If the nipples are seized, it's worth replacing them all.

Now you'll have the freewheel sprocket in about the right place to get a good chainline.

That's the same fit as any other modern singlespeed screw- on freewheel.

I've run the 36poe (3 pawl) ENO and the 72poe (6pawl) Trials version. I went back to the 36poe. More drag, more noise for no benefit to normal riding. The Halo Clickster is a similar product, but many of those types go over 90- 100poe, and use 9 pawls My Shimano XT hubs have 20poe, and I think my mavic is 26. Both are 2 pawls. I never even gave POE a thought. Mostly useful for close quarters slow speed stunts.
3 pawls are stronger than 2, but beyond that they work in sets of 3 to provide closer engagemant angles. They don't add strength.
