Advice on Retro Rebuild please

i've almost rebuilt my Fat Chance Buckshaver.

Not sure what handlebar to use.
Prefer to use a straight one, rather than downhill.

Any advice - not sure there is too many options to consider - surely a bar is a bar is a bar?
