Advice needed on changing from P2 forks to Z2 Bombers

I have recently bought myself a set of Z2's bombers. I was using a P2 fork and flat bar with a 125mm Velocity stem that meant I was stretched out to far for longer rides. One of the reasons I changed my fork is for a more comfortable riding style and a sightly relaxed upright position.

I am unsure what stem length and angle I should be buying, and also suggestions on whether I use 25.4 mm stem and bar or move to 31.8mm? Also will need to change my headset to match.
The bike is a Kona Explosif 1995, and I will be rebuilding it with parts that would have been available from that time onwards. Suggestions on what brands and dimensions would really help me decide what I need and where to buy them from.

The forks will raise the bars up a bit due to them being longer. Make sure you set them up well to get the best benefit.

If you need to buy a new stem anyway then see if you can borrow a slightly shorter one, say 110mm as a start. If you go very short straight away you might find it's too short!! Maybe go to 100mm? Give it a go.

Leave the steerer as long as you can, don't cut it until you are 200% sure you need to, you can't make it longer again, but you can always add spacers.....

Bar diameter? I could never tell the difference between 25.4mm and 31.8mm on a general XC bike. On a big travel all-mountain bike it might be good especially with very wide bars but for your Kona I'd stay at 25.4mm as it'll save you money changing them.

There are LOADS of great deals on 25.4mm Ahead stems on the internet at the moment - like 60/70% off at CRC so take a look there.
 
As above really, if you don't know what you want then use what you have, grab a load of spacers and move the stem up and down to simulate stem angle, then shorten as needed and buy to give you the best look once you know the rise. Possibly try a large sweep bar, say 7degrees or so. You should be able to get them in flat bar and effectively shorten the reach and can gain wrist comfort.

Get the forks setup for yourself as well, look in the archive for good setting for you weight and start from there and tweak the damper setting as you get used to them.
 
My old stem is a quill stem so I can't use that, I will need a new headset, non threaded Aheadset. My old Ti bars are damaged so will also need replacing.
I am going to stick with 25.4mm, as far as stem length and angle I'm still no wiser as to what length and angle I need or alternatively how I measure to find what is correct for me?
Also how do I know what width and rise bar will be suitable?
