120 to 130 rear spacing and chain line.

Has anybody any experience of cold setting a frame to accept modern hub and its associated effect on chain line? Do I presume it depends on the frame, so pretty much hit and miss?

Have had an early 80s frame cold set to 130, from 120, by a highly experienced London frame builder. Alignment checked and dropouts realigned. Am I being naive to assume that I can simply slide in a 11 speed cassette and experience no problems?
 
The first worry is where the stays meet the rear wheel, if its not flat, the last cog will interact with the frame in a way that letters of complaint get sent to The Times.

That is super close, hence damage to stay from removal. In terms of chain line, is it pot luck? Has an 11 into a cold set 120 to 130 been successful achieved hassle free?
