On an unrelated note, I have an old DX derailleur as well, and the wire anchor bolt screw has stripped...what is the part# or what can I use to replace it?

Cockpit sorted...

Also had a muck about with adding a rear disc as an emergency “drag brake”, thought I’d try before I buy and used a front from another bike. Yes, but that’s original, it’s the linking pair on the near side.
As for parts I’m trying to stick to ‘87-‘90 as a rough guide. So far it’s only the wheelset, forks and seat posts that aren’t.
 
Looking really good! Why have you got the gripshift cable barrel bits above the brake levers though? They're usually installed below, looks a lot better and cabling is probably easier
