Granny will not go lower than 24, it's a 74BCD limit*, you would need to switch to the new fangled MicroDrive for Suntour or Compact Drive for Shimano, so you may want to hold off on the rings.
You could stretch to 30 or 32 at the back.

Sram 8 speed will work fine..pick a plating option depending on how shiny you want it!

If you get stuck for decent rings try spa cycles they have lots of options for 110/74.....

St johns street cycles have all sizes of spacers and bolts. The inners will need to be their long inner option, if nobody on the forum has a spare set. Shimano xt m730 / deore mt60 bolts will fit.
