Could I replace a u-brake with v-brakes?

Try using a Shimano u brake. The dia compe one on there isn’t great

U brakes are more exclusive and more cool. I wouldn´t chage. Check the brake pads and buy some good ones like cool stops etc.

Deffo agree with @madjh block help a lot, the xt ones are pants when old and hard. Cool, top or bbb work well.

If you have room for the linear pull a roller cam brakes are super cool

U brakes are very effective as they have their own arch holding the posts together. Cantis tend to be no more powerful than the frame is flexible, unless braced. Set up right they are drop anchor effective. Only real problems are the low horizontal mount collects mud like a shovel and tends to get oil contamination from the chain set.

Agreed. U-brakes are quite effective particularly when paired with a booster/arch.
