What price to pay for a good chromoly GT frame like Avalanche, Bravado or Karakoram?

Just ordered the blue Jagwire cables for my Bravado! Only question, should I worry about them if they are galvanised inner cables?
My bikes are stored indoors only but do get ridden, I haven't had any issues with any of my other bikes' brake/gear cables going rusty so far.

Should be absolutely fine. Old cables weren't stainless, so if kept indoors and cleaned/lubed after muddy rides now and then, you'll have zero issues. Jagwire seem to be the go-to brand for coloured outers!

Galvanised can be mechanically superior to stainless (remember chrome- plated spokes?) - but corrosion resistance is more important for many riders.

I run full length in one way or the other. Modern wire sets often have transparent covers for the exposed parts and something to handle the transfer points between the exposed and covered areas. Spray lubricate also internally, with something that doesn't get sticky, something with ptfe should be good, but don't drink it.

I avoid ptfe as its a harmful "forever chemical" that builds up in living organisms.

It's surprisingly difficult to get certain products without ptfe.

And of course it works great!
Like lead in petrol, cfc refrigerants, doping in sport and smoking

I only cook with stainless steel pans, unless that is bad too?

Cast iron is top of the tree.
But stainless is good.

Aluminium has a whiff of toxicity to humans, but you can make the pans out of old Kleins, Zaskars and Cannondales so maybe it's Swings and Roundabouts?

Although they were usually made from cast iron

My wife has a ton of knowledge regarding cookware/toxicity to humans. Top line from a monkey like me:
BEST - Cast iron, glass coated/ceramic such as Le Crueset (although not all of Le Crueset range is like this anymore)
GOOD - Stainless (high Nickel content can be poisonous to some people)
BAD - Aluminium & non-stick coatings (Aluminium is a poison to humans) but is also used for: Deodorants to help block pores so you don't sweat! And any aluminium packaging will have a thin polymer coating (plastic!) where it is in contact with food/liquid to make it safe to us to consume from.

Back to bikes... looking forward to seeing how the blue outers look!
