It's not vegetarian , but a Meditteranean cookbook. There's plenty of very yummy veggie recipes in there - Almond and yoghurt soup for example.
You might even get tempted by the meat recipes and turn normal again! :lol:
 
when I was a student and a veggie I existed on chips and cheese, macaroni cheese and cheese toasties never found the need to explore any further really.
 
Some awesome recipes on the net too, have a search for your fave veg - recipes, or have a rummage on BBC site, despite loads of books here, sometimes end up cobbling summat new off the net. Curry is always a winner, good spices and paneer, add tommys onions and pepper. yum. 8)
 
Veggie Curry is my favourite - I make a few types depending on my mood, I use curry pastes as a base for convenience.

Slow cook the onions till soft then stir fry the spices with them.
After a minute or so add the tatties and stir fry a little longer add the tomatoes and some liquid or stock if wanted.
Bring to boil then add remaining root veg and simmer till nearly cooked, add any thing like Chickpeas or spinach or peppers nearer the end of cooking as they don't take long. (.

Good Curry Veg:

Potatoes, Cauliflower, Swede, Carrots, Butternut squash, Chickpeas, Spinach, Red Peppers. Fresh or Tinned Chopped tomatoes.

You can also make really good fajitas with Quorn instead of chicken - if you cook the Quorn perfectly it is almost good enough to fool a carnivore.
If you can make up your own spice mix - use discovery foods fajita mix as a guide but take out the lime from their list and use fresh and only enough add salt to taste. (the discovery foods fajita mix is a good mix if you want a quick meal though, nothing scary in the ingredients).
