First time poster, please go easy on me…
I’m sorry if I have posted this in completely the wrong place. I have looking to rebuild this bike and have a few questions I thought might get kindly answered on here! The first is regarding the old wheel set I have pictured. These are not the original wheels but I am hoping to reuse the rims. At the moment these are set up for disk brakes but can I rebuild them so that I can use them with my original avid rim brakes? Any advice would be gratefully received!

I'm pretty sure D521's can be used with rim brakes, so you could rebuild them onto non-disc hubs if you wanted. You could also just run them with rim brakes as-is without changing the hubs and retain the option to swap to discs later if you wanted.

I really like those FSR's, good luck with the build. Others will probably agree that you should carefully check the area around the chainstay pivots for cracks before investing too much time/effort into the build though. I would also replace the shock mounting hardware with new stuff - I broke those bolts often on my '98 frame.
 
Mavic D521's are designed for rim brakes, so no worries there. Leave the hubs, you might want to upgrade to disc brakes later on.
 
I've got a blue one of these sat in the loft that I can't decide what to do with. missing some of the shock hardware, which isn't an issue really, but I want disc brakes not rim brakes, so it's never really done anything. I keep toying with the idea of making a shark fin for it, but I'm lazy.

I used an cheap ($10) Amazon rear disc adapter on a slightly later model FSR and it worked well:

I don't have a better picture of the brake setup, but it was easy.
