Ah, can see in the extra pics they might do both? Do they need a moon unit type insert, or will they default to one setting without it?

Hi, it's correct. You need an insert to change it (that one is missing).

Without the insert do they still work as one or other, just without the second option? ie without the insert they're canti only, for example?

Hi Levers work with Cantis and you need inserts for V-Brakes.
