The foil trick does work on the lesser areas. Learnt it when I was doing the Armstrong.

That looks like a first gen chainset on that Gazelle, with the not quite drilled through chainrings....... Nice, very nice.
Any 70's looking headset will do the trick IMHO
just don't stick on a later headset. I've got some campag c-record headset "thing" on one of my frames and it looks like someone has stuck an aluminium ice-cream cone on top of the head tube
