I was going to upgrade to an 8 speed wheelset down the line. Unless that wheelset will accommodate an 8 speed cassette. Wasn’t sure

Sorry, I should have read the spec sheet better to see you're using XT 7-speed hubs. An 8-speed cassette will fit with some space tinkering - as always, see the immutable Sheldon for the low down: https://www.sheldonbrown.com/k7.html#897
