You can always buy 8s (or even 7s) bar-end shifters and swap them onto the mounts - or run the 9s ones in friction mode.

They are so light in use and there is so much feel that you don't really need indexing anyway.

Won't split the Pauls mounts though I'm afraid - want to sell as a complete package.

You would need the shifters anyway to work (unless you have a set already) as I'm pretty certain they are manufacturer specific - ie. Pauls made one for Campag, one for Shim etc.

Very interested in the thumbies/pauls mounts, do you know the weight of them? Also, if I went 9 Spd, would my current 8 Spd XTR M950 mech work, I need a new block (I am assuming that 9spd block has a thinner gap/cogs so fits a 8spd Hope Freehub) and chain anyways.

TBH it's all a bit new for me.

I thought 950 was 9 speed anyway though? Or did that come with 960?

9 should work on 8 as yes, thinner spacing. 9 Won't work on 7 or 10, but pretty sure it does on 8.

Weight?

No idea, and no means to measure I'm afraid. Imagine the lightest thing you could get that would shift gears, and you would probably come up with these.
