That is the one!!!
Sometimes I even amaze myself!

are they any good?
Yes, they're good components. MAVIC don't make junk.

also, what tool would I use to correctly dismantle?
MAVIC made special headset spanners for this model. You see them very occasionally on eBay, or if you have a long-established local bike shop they might be able to do the job for you. An ad in the wanted section here might turn up a pair for loan, or there are various dirty methods that might work - a cushioned pair of water-pump pliers, for example, or the boa wrench AR-CoolC suggested.

The brakes look like Campag Athena or maybe Veloce from the late eighties or early nineties. You'll find a picture in the catalogues here:

Ok, so now having trouble finding some cable adjusters for these brakes. The hole where the adjuster should go doesn't seem to have a thread. Any ideas?

It's a hollow threaded rod with a big nut on it, it slides up and down in the hole with the position held by cable tension and the position of the nut. If that makes sense.

Ok, me again. The frame has a Mavic bottom bracket. I've taken it apart and it has two cartridge bearings inside (16mm inside diameter, 30mm outside, 9mm width).

Any idea where I can get a replacement. Have looked on a number of bearing sites and can't find one. Any clues?

THESE people were very helpful when I had a request for an odd sized plastic bearing I needed for a tool at work. Very knowledgable and profesional.
