Roast beef
Roast pork is ok if its well trimmed and a shoulder cut

Its what i miss not working as a butcher any more :cry:
A nice rib of beef [5 ribs long] the eye removed along with all the fat,sinews and gristle
Just a strip of fat to keep it moist
Cooked medium rare
At one time i had so much steak in the freezer i had to give it away to mates just to make room
Barbies at mine were memorable

I have to get back into the trade
