Sure they'll be exceptions, but as a rule of thumb forks take m8, frames either m10 x 1.0 or 'coarse' thread m10 x 1.25, where the second number is the pitch of the thread, measured in mm (if you measure across the top of 5 or more threads it should be possible to check just with a ruler).
