Getting brake levers at the same height *on the bike*

My method, too! Ruler or headset/pedal spanner.

Bars that are parallel to the ground at the bottom, are a very 'old school' set up, so the saying goes. No-one does it these days on modern bikes, especially on a bike like the OPs.

None of mine are like that. If they were, the end of the bars wouldn't get used at all. It's an un-natural angle for your wrists. Tilted up is more comfortable. But that's just my opinion, it works for me. Do whatever works for you.
