This isn't quite right - Briatore hasn't said anything, but Renault have accepted that the charges are justified and announced that Briatore and Symonds have 'left' the team.

Briatore may well continue to deny everything, but the crucial point was that Symonds refused to answer the investigators' questions. By refusing to deny the allegations, he implied that (a) they were true, (b) unlike Briatore, he wasn't prepared to lie about it, but (c) he was prevented in some way from telling the truth. It is his refusal to answer that has brought matters to a head and forced Renault's hand.

It wouldn't be right to describe someone who has cheated as honourable, but at least what Symonds has done at this stage is the honourable response of a guilty man. Unlike Briatore, who presumably assumed he could bluster his way out of it. But he has apparently offended Bernie Ecclestone as well as Max Mosley, so no amount of bluster will save him.
 
according to french media they were both sacked as Renault dont want a too strong sanction .

Briatore is still the agent of 25% of this year Formula 1 drivers though .

Another twist...

Dave Richards and Prodrive (Aston Martin Racing, Subaru WRC etc) has put together a package to buy Renault Formula One. The FIA will have to take this into consideration when handing out the punishment on Monday. On the other hand it could be another shrewd move by DR; he buys a company that gets a years ban thus devaluing it somewhat just as the cheque is about to be signed and gets a year of testing and development without restriction and interference from the FIA (which hopefully will by then have his old pal Ari Vatanen at the helm (DR was Ari's navigator when they won the WRC in 1981- only private team to take the title)

If only the racing could be as interesting as the ins and outs of F1 paddock life.

I don't think the FIA 'will have to take this into consideration when handing out the punishment on Monday' at all - it has no relevance. Or put it this way, if they do take it into account, the last thing they will do is admit to it. And I doubt very much whether Renault will receive a ban, more likely a fine, and much less than the McLaren fine.

Whether it's a shrewd move by DR depends on how much he would offer. If Renault are desperate to sell, and there are no other bidders, maybe he doesn't need to offer very much, and in that case it could be shrewd. And would it even be DR's own money, or the Arabs who own Aston Martin and put him in place as the figurehead?
 
A huge fine from the FIA will as you say, send Renault packing. It looks like Renault will revert to being an engine supplier- something the FIA would like to see (if there is only Ferarri and Mercedes doing competetive engines next year we are just getting one step nearer spec racing) so I think the FIA will go easier than on McLaren.
A huge factor in this has once again been Max. Max wanted Flav's scalp to go with Ron Denis'. He has it now and can retire to do all sorts with call girls knowing he took down his most hated enemies whilst in power. Its funny how all those documents were leaked last week isn't it. Max says he is annoyed that that happened but won't be looking into who or how they were leaked.
The FIA can say that Renault acted honourably by getting rid of Flav and Pat and as a consequence the punishment has been made with that in mind. There is no point in docking last years points as it would have no affect on title outcomes and even a $10,000,000 would hardly hit Renault as that is what it would have made for those 10 points that Alonso got.
Will be interesting what happens to Flav and Symonds though. Although they have now gone, and its unlikely that Flav will return to F1, will the FIA frown upon any team that should employ Symonds in the near future?

The Prodrive deal will as you say be backed by the Middle East. I cant see anyone else bidding for the team- BMW have had to severly reduce the asking price to sell off BMW Sauber this week. FIA had just the same day given the 13th grip spot to Lotus as well which means if Sauber are to run next year the Concorde agreement has to be amended. The whole thing is getting more and more shambolic by the week.
