You need any 8 speed Campag Ergos with a Campag 8 speed rear mech to work with a 7 speed Shimano cassette, or some old style 9 speed Campag Ergos with the 'Hubub' routing for your Shimano mech.

I've got some 8 speed Sora STIs and a 12-25 cassette for sale if it's any use.

I prefer the shift action of Ergos or RSX to Sora, also I'd need a different freehub body to fit an 8spd cassette to my 7spd hubs wouldn't I?

I'm wondering whether to retire the bike altogether and shell out for a new one, its too old to buy decent reliable parts for now and to upgrade the transmission to a decent standard would cost as much as a new bike.
 
Saw that thread and tried it just in case :) No joy though.

I took the top cover off to see whats going on and its just worn out. The lever doesn't push the cable holder far enough across to engage the ratchet anymore. I either need a knackered unit to strip for spares, a new unit, or a pair of 8spd Ergos..... Or a new bike altogether :)

You dont need the 8 speed cassette, as shimano 7 and campag 8 are both 5mm spacing. you just lose a gear, so the ergo would only operate 7 gears with a redundant click. You can use a 9 speed rear mech also, providing its a 1st generation campag 9 speed, commonly known as "20th century" as opposed to 21st cent.

Also, if youre prepared to go down to 6 speed, the shimano 6 speed cassette and rear mech will work directly with the 8 speed ergos. I've done this for a number of years, but 6 speed cassettes are getting rare. note that 6 speed cassettes have a wider spacing than 7, its not just a case of losing a cog.
