1992 Scott Atacama - gravel or touring build

Desided to turn this build to the touring side, maybe for "bikepacking" but I think I would like to get into touring.

The hold-up with this has been the brake holder with 1 1/8" ID for the cantis. I already ordered one, about a month ago, but the shop informed that it was actually out of stock and I could not find one anywhere else and kind of forgot about it, but I now have one ordered.

Something like this. Maybe 45mm slicks, fenders, rear rack and some lowriders for front... Spacers 40-45mm below stem and 5-10mm up and cut the steerer? Thats 40mm of spacers under in the pic.

This was with the original fork that I now think was ok after all. The right side dropout/blade is maybe 5mm more back than the left. The Surly was 2nd hand so not that big of a loss🥴
