I changed my v brake bolts by choice to stainless,two essential tips-try and get a cap head with a head as small as possible or ideally a dome head,these wont foul anything.Most importantly of all is to apply a liberal coat of copper grease on the bolts as stainless will cold weld (seize)on dissimilar materials.

Button heads.....i use stainless, but you dont have to. There is a flanged version too, but with a decent form C washer behind the normal ones they are fine.

Any bolt supplier will have them off the shelf for pennies.

As for length, once your 5 or 6 turns in, you will snap the head off first anyway....especially on stainless.
