In terms of tricky bike jobs I'd vote wheel building easier that setting up cantilever brakes or front mechs. :D

To add to that: you don't work your way around the wheel, you lay all the drive side "trailing" spokes first... See the article for more

That will work but will likely be more confusing you have to lace spokes in sequence in order to get them to cross one another correctly...
