I’m glad you found a solution. The line between having enough travel and the FD not fouling the crank arm is a fine one with some of these older triples.

To follow up on my solution to using an old Campagnolo FD with a triple, although it did work, I found it so hit and miss I ditched the triple idea and went back to a super-compact style double anyway.

I managed to solve my shifter issue (not having enough cable pull at the lever) by clamping the cable on the other side of the bolt on the FD (the side nearer the crank, further away from the frame). This gives enough pull for the FD to move onto the big ring without the lever going so far back. I seem to vaguely recall that there is a similar thing you can do with a Campagnolo Nuovo Record RD to allow greater travel on those, which I think was what prompted the thought somewhere in my mind. Anyway, it seems to work.

While I don't doubt the fact that it works in terms of cable travel, there is the chance that leverage ratio between lever and mech is altered, such that the lever needs to be tightened up really tight to prevent the mech slipping towards the smaller chainrings

Yes, I think something like that was going on. Essentially I was trying to use parts that weren't designed to go together, and so it's not too surprising it didn't really work too well. Sometimes you can get away with that quite easily, other times not, I suppose.
