The kickback 2 speed hub changes between gears by just back pedalling a little. It's a knack and you will quickly learn it. It's barely more than stopping pedalling momentarily.

The $1000 ebay one... Hundreds like that outside every Dutch railway station...it's covered in plastic bits, maybe 10 years old tops.

this is why i hate the states. someone has a 30yrs old bike and they call it vintage. and of course, they automatically ask thousands of $$ for it just because it has some surface rust

Fongers was a maker of high quality bicycles and a well-respected brand in Holland from the late 19th century until the early seventies, when they ceased production and sold the brand name to Batavus. After that Batavus rebranded some of their own models as Fongers until the mid-eighties. 'Yours' seems to be one of those, and a base model at that. Not a bad bike at all (nothing wrong with a Batavus, and if you look after it your grandchildren will still enjoy it), but for $700 you can do a lot better.

For more information on Fongers, have a look at fongers.net, if you haven't already done so. It's in Dutch, but there's a summary page in English: http://fongers.net/summary/.
