You could also consider moustache bars Remko, if you haven't done yet. Or some other older curved bars, if you don't like dropbars. They would probably match your shorter old stem (more reach) and race levers (clamp diameter). Personally I think they look more suitable on a late 70s/80s bike than flat bars. But that's just me and it's certainly your bike.
I built up a more usable coachbike for the rowing club and swapped that with the Gazelle.
