An idiots guide to iPod downloading please

Ok, simple question is, I want to get youtube tunes on to my iPod. They are mainly if not all over an hour long. Do I need to convert them before sticking them on my iPod, and if so, what is the best software/site to use that can cope with converting pieces that long.

The files for putting into ITunes will need to be Mp4 or M4v. I don't know about getting them out of YouTube but expect it will be reasonable straightforward with the right software.

Once you have them as say an avi file, then I would use Handbrake to convert them. Easily the best one I have found.
