Which shimano cantilevers will work best with my Univega?

Will the wide profile of the shimano 732 work best or the later shimano 733.

I have some shimano m733 (I had planned to fit to a Dawes galaxy but I don’t think they will fit particularly well).

Also, are these pads ‘touring pads’ and are these optimal?

Any advice would be appreciated.

I've never come across distinctions between pads, other than KoolStop and Aztec will let you know about how 'good' their compounds are. Ceramic rim-use pads of course. Pads is pads yes?!
All depends if you want 'cool' cantis, or cantis more date-specific. Both types work well. I rate 732 as more 'cool' - got a set on a 1990 or so Diamond Back, a 93 BOTE and look cool.
If the Univega was born when the M733 were about and you like them go with them. They're still cool, classic and classy. The wider cantis would prob look better on the Dawes tourer. What I'd do anyway.
I'd maybe have the pads with a bit less post showing outboard, thus bringing the cantis 'out' a bit. There's always a sweet spot and I've never found it to be when the pad is pushed all the way in like in your photos.

No ! The rubber compounds used in brake blocks have evolved over many years both to accommodate the changes in brake design and the
varied requirements of the cyclists . Its basically finding the pad with the balance between wear and grip that suits your particular needs

With regard to the amount of post on view , I would suggest that you check out Sheldon Brown's article on ' setting up cantilever brakes '
Brake straddle cable length is super critical when setting up cantilevers , and a close study of the ' angles ' involved well worth the effort

Of course things have developed, but who buys Weldtite or similar unless it's for a kids bike? Find a brand - Koolstop/ Aztec forget about it. It's not like one needs 'racing pads' like in a track car. Similarly who'd buy the best stopping cantilever pad in the world that could flip you over the handlebars (Aztecs can do that - juicy endoes are easy enough), but only last 2 months of use?

Perhaps I shoulda said (decent) pads is pads...
