Get some period used wheels and tyres and use it.

That way you won't hurt the NOS rims & Tyres (which mombat no longer sell ).

All rest can be repaired, repainted or will last for ages if you look after it.

Whilst it is nice enough just to hang on a wall, if i were in your (fortunate) position, I'd def get some other wheels and ride her as she was meant to be ridden. It would be a shame not to and as above - with a bit of TLC and cash, everything else could be put back to its current condition.
