Beans on toast, cheese on top with a dippy fried egg, lashings of tomato sauce and a generous sprinkle of cracked black pepper - perfect comfort food, or a hearty meal after a cold days riding!

That's a recipe for soggy cheese on toast, surely it should be lightly toasted on both sides? Red onion and tomatoes I do agree with.

If you toast the second side, leaving the cheese to cook under the grill would then burn the bread, as it would be cooked twice.

Basically, cook one side, turn over, sprinkle cheese on, and said ingredients, then pop back under grill until cheese or toast reach personal taste.

If you want to, you can put red sauce on the bread before the cheese, and it ends up like a pizza. :P
 
HP is another thing they've messed with and f**ked up! Since they lowered the salt content in it it tastes odd or is that just me??? I do like the Guinness version though.....

You can do Welsh Rarebit anyway you like, toast the bread both sides or not, it is all good.

Anchovies and aged Gruyère float my boat, but I am happy enough with local cheddar and Worcestershire sauce.

Ketchup on toast. Not done that one in a while, but if you made the ketchup fresh and drizzled olive oil onto the toast with a good grinding of pepper first I see no harm. Now you may as well shove a poached egg on there with a little coriander.
