they can do 8 speeds but you can also use them for 7 speeds

Can confirm that they will work but you'll be relying on the Shimano floating pulley. Spacing is different...not a perfect match.

As for the front, you have no problems.
The rear might jump on the highest gear, but if you adjust it, you don't allow the chain to go into the lowest gear. It's not the first time I've seen it installed.
In any case, with 8 speeds, you can use it fully.
