How do you tell how much rim braking surface is left on the rims??
 
see if the braking surface has gone concave by putting a flat edge across it, i the braking surface is wearing this will show it, don't run to much longer if they are that worn coz it can lead to an accident when the side of the rim blows out.

... but bear in mind that a number of classic rim designs were built concave - Araya RM17, Campag Atek, etc.
 
measure it with a micrometer ;)

though if it's not gone through there is enough left to brake on, though it'll start to loose it's ability to dissipate heat quickly, probably have lots of grooves in it and look quite worn.

Basically you check visually and take a guesstimate unless there are built in indicators.
 
Put it behind a door if the hose on your pump is long enough. Pump it up to 100 PSI if it goes bang, it'll be bloody loud hence putting it behind a door, it's knackered. If it doesn't go bang, let the air out and it'll be fine for a while longer.
