Here we have an M900 XTR rear wheel. Freehub is 8 speed. Double butted spokes on a Weinmann Zac 19 rim.

Hub itself is nice and shiny, rim is a bit tatty, but certainly usable. Bearings a little notchy. Came on a bike I bought, but I've never used it.

How do you know it's 7 speed (measured the length ? I assume), looks 8 to me.

Unless someone changed the freehub it's 8 speed, of course you could run an 7 speed on it with a spacers

It's not original though, it' looks like a 8 speed compact body (hyperdrive-C) and it's missing the Alu spacer it needs. Also is that an alu axle spacer ring on the left side of the hub
Did they make 7 speed compact bodies ?

(to shifter person above, unless somebody put a cheaper replacement shifter in it , it's 8 speed... of course you can run a 7 speed cassette on ... or it not working to well and you're loosing a shift. )
 
Remember, just because it has 7 ‘clicks’ it is not 7 speed, I bought a cheap set of XT shifter once because the seller thought they were 7 speed “see they only click 7 times”.
 
OK just measured the freehub and it's 35mm exactly from edge to the stop nearest the spokes.

How does that measure up?

A 7 speed cassette would need an ~5mm spacer for that too work ;) if I have my maths correct.

7 speed sprocket @ 1.85mm thick *7 + spacers @ 3.15mm *6 = 31.85

EDIT to correct italics and add
8 speed sprocket @ 1.8mm thick *8 + spacers @ 3.0mm *7 = 35.4
