Is it possible to shim a 1 inch threadless steerer to take a 1 1/8 ahead stem, the proflex 856 I've just bought is 1 1/8 headset with a 1 inch steerer shimmed to fit!!! Seems to have been fitted that way from new, or do I just have to find a 1 inch aheadstem???

If they're girvins thats how they are. They come with a 1" stem.
Not sure about aftermarket shims but 1" stems come up on ebay frequently.

Halfords have the shims on the adapter to convert threaded/quill steerers to Ahead; 1" Ahead stems are available of course, so you have either option...

Thanks a lot chaps, I've already got an array of 1 1/8 stems so it's probably easier to buy the shim, the other 856 I've got I built up from a new frame in 97 with a new set of crosslinks from an 857 which I'm sure had a 1 1/8 steerer, thanks again, Dazz.
