Set of disc brakes to swap against parts.

Hello,

I am looking for a set of disc brakes for my fully. I can not buy, just swap against parts that i have in the shed. What am i looking for? I would love a set of Hope brakes. That would be ultimately the greatest option. But in style of the bike, i would also love a set of the first Shimano Deore XT disc brakes. That is the M75x series i believe.
